I have been wondering why so many people have celiac disease these days. It was discovered in the 1940s, but I don't recall hearing about it until occasionally in the 1960s.

You can't make a CLEAN environment. Our immune system wasn't built for that. It all boils down to the concept of hand sanitizer. It keeps "BAD STUFF" away. Which makes you unprepared to handle it when the "BAD STUFF" gets you no matter what. I rarely wash my hands, outside of them being filthy with dirt, crap or noxious chemicals. I do that specifically because I want my immune system challenged every day. "That which does not kill me makes me stronger. At this point I can bench press a '68 Buick."

I'm 73. When I consider how we are protected from ourselves and others through regulation and a million enacted safety measures like paper wrappings on the outside of ice cream cone it seems truly wondrous to me how anyone my age survived childhood and adolescence.
On the other hand, the protectors will take rats in a lab and make the poor bastards drink the human equivalent of 10 gallons a day worth of something like an artificial sweetener and when the rat gets cancer the sweetener is declared a carcinogenic and unsafe for human consumption.
